Chia-persimmon and coconut pudding

Ingredients

  • 3 tbsp chia seeds
  • 200 ml coconut milk
  • 1/2 tsp ground vanilla
  • 1 tbsp maple syrup, optional
  • 1 large persimmon

Instructions

  1. Mix chia seeds along with vanilla, coconut milk and maple syrup if using and keep in the fridge overnight to soak. The next morning blend the persimmon and serve together with the chia pudding. Enjoy!
